Ingredients
  

For the Chicken Marinade:

  • 1 lb 450g boneless chicken thighs or breasts, cubed
  • ½ cup plain yogurt
  • 1 tbsp lemon juice
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger

For the Masala Sauce:

  • 2 tbsp butter or oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • cups tomato puree
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

  • Marinate the Chicken: Mix all marinade ingredients in a bowl. Add chicken, coat well, and let it rest for at least 30 minutes (or overnight for better flavor).
  • Cook the Chicken: Heat a pan or grill over medium heat. Cook chicken until golden brown and slightly charred. Remove and set aside.
  • Make the Masala Sauce: In the same pan, heat butter. Sauté onions until soft, then add garlic and ginger. Stir in spices and cook for 30 seconds.
  • Simmer the Sauce: Pour in tomato puree and simmer for 10 minutes. Stir in cream and cooked chicken. Let it cook for another 5-10 minutes.
  • Serve & Enjoy: Garnish with fresh cilantro and serve hot with Hyderabadi Biryani or Garlic Butter Naan.
