For the Chicken Marinade:
- 1 lb 450g boneless chicken thighs or breasts, cubed
- ½ cup plain yogurt
- 1 tbsp lemon juice
- 1 tsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- 1 tbsp minced garlic
- 1 tbsp grated ginger
For the Masala Sauce:
- 2 tbsp butter or oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tsp garam masala
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp ground coriander
- 1½ cups tomato puree
- ½ cup heavy cream (or coconut cream for dairy-free)
- Salt to taste
- Fresh cilantro for garnish
Marinate the Chicken: Mix all marinade ingredients in a bowl. Add chicken, coat well, and let it rest for at least 30 minutes (or overnight for better flavor).
Cook the Chicken: Heat a pan or grill over medium heat. Cook chicken until golden brown and slightly charred. Remove and set aside.
Make the Masala Sauce: In the same pan, heat butter. Sauté onions until soft, then add garlic and ginger. Stir in spices and cook for 30 seconds.
Simmer the Sauce: Pour in tomato puree and simmer for 10 minutes. Stir in cream and cooked chicken. Let it cook for another 5-10 minutes.
Serve & Enjoy: Garnish with fresh cilantro and serve hot with Hyderabadi Biryani or Garlic Butter Naan.
