- 4 bone-in chicken thighs
- 2 tbsp olive oil
- ½ lemon juiced
- 3 cloves garlic minced
- 1 small red chili finely chopped
- 1 tbsp brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon sweet paprika
- ¼ tbsp salt
For the Peri Peri Sauce/Marinade
In a food processor, combine the peppers, garlic, paprika, cilantro, and basil. Blend until well mixed.
Slowly drizzle in the olive oil while processing until the mixture thickens.
Stir in the lemon juice and season with salt to taste. Refrigerate until ready to use.
For the Peri Peri Chicken
Pat the chicken pieces dry and season them with paprika, garlic, salt, and pepper. Set aside.
In a large bowl or resealable bag, coat the chicken with half of the peri peri sauce. Cover and refrigerate for at least 1 hour to marinate.
Oven Option: Place the marinated chicken in a baking dish and bake at 375°F (190°C) for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
