Ingredients
  

  • 4 bone-in chicken thighs
  • 2 tbsp olive oil
  • ½ lemon juiced
  • 3 cloves garlic minced
  • 1 small red chili finely chopped
  • 1 tbsp brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon sweet paprika
  • ¼ tbsp salt

Instructions
 

For the Peri Peri Sauce/Marinade

  • In a food processor, combine the peppers, garlic, paprika, cilantro, and basil. Blend until well mixed.
  • Slowly drizzle in the olive oil while processing until the mixture thickens.
  • Stir in the lemon juice and season with salt to taste. Refrigerate until ready to use.

For the Peri Peri Chicken

  • Pat the chicken pieces dry and season them with paprika, garlic, salt, and pepper. Set aside.
  • In a large bowl or resealable bag, coat the chicken with half of the peri peri sauce. Cover and refrigerate for at least 1 hour to marinate.

Notes

Oven Option: Place the marinated chicken in a baking dish and bake at 375°F (190°C) for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
Storage Instructions:
  • To Store: Keep leftover chicken in an airtight container in the refrigerator for 4-5 days.
  • To Freeze: Allow the chicken to cool completely, then store it in shallow containers and freeze for up to 3 months.
  • To Reheat: Warm in the microwave in 30-second intervals or reheat in a preheated oven until heated through.
